Upside Down Ham Loaf


  • 2 tbsp butter
  • ¼ cup Fancy Molasses
  • 8-12 pineapple cubes or wedges
  • Whole cloves
  • 4 cups ground cooked ham
  • 1 cup bread crumbs
  • 2 tbsp grated onions
  • ½ tsp dry mustard
  • 2 eggs slightly beaten
  • Dash cayenne pepper
  • ½ cup pineapple juice


  1. Melt butter in bottom of greased loaf pan or casserole dish. Cover with molasses. Stud pineapple wedges or cubes with whole cloves and arrange in molasses. Combine ham and remaining ingredients and pack into pan or casserole dish on top of pineapple.
  2. Bake covered in moderate oven for 30 minutes.
  3. Turn upside down on hot platter.
