Iced chai latte with molasses; a little slushy, a little frothy and a little sweet.

Cold drinks are a joy in the summer. Even better are cold drinks that are a little bit slushy.

To me that’s a back-deck indulgence. One of those little ways to enjoy summer just a little bit more. Like sitting to admire the flowers growing, and giving thanks that another school year has finally wrapped up. (To bid goodbye to Wow Butter until September.)

I remember that giddy feeling of freedom as we’d  walk out of the school and into summer holidays on that final day each June. It was always hot and sunny, and our over-stuffed backpacks were an effort to drag home. Report cards were an afterthought.

We’d eat lunch on the deck and marvel at the fact that, at that particular moment, the entire summer stretched before us.

What never occurred to me was that my mom was probably about to explode with the thrill and relief of packing away the school routine for two months.

I know that now because I’m a mom and the final two weeks of school can practically do you in with thank you note writing and thank you cookie baking and teacher gift buying and remembering to send in a white t-shirt for tie-dying on Friday and signing the permission form for the end-of year field trip and packing the sunscreen for the field trip…

This is a sit-in-the-sun drink to usher in the beginning of summer…

Iced chai tea latte with molasses

Makes one generous serving

  • 1 cup milk (can substitute nut or soy milk)
  • 1 tea bag chai tea
  • 2 tsp. Grandma Fancy Molasses
  • 1/2 to 1 tsp. cinnamon
  • 6-8 ice cubes
  1. Place milk and tea bag in a small pot and bring to a simmer.
  2. Remove from heat and let steep 5 minutes, pressing down on the tea bag with a spoon a few times.
  3. Remove tea bag from milk, transfer to a blender and add cinnamon, molasses and ice cubes.
  4. Whirr until it’s slushy and a little foamy.
  5. Transfer to a glass and garnish with a sprinkling of cinnamon.

Try this with coffee too! Simmer coffee with milk (you decide on the proportions) and add it to the blender with the molasses and ice cubes.
