Spaghetti with Fresh Tomato Sauce


  • 4 large, soft, ripe tomatoes
  • 2 garlic cloves, finely chopped
  • 4 tbsp. in total of chopped fresh herbs such as basil, marjoram, oregano or parsley
  • 2/3 cup olive oil
  • 2 tbsp. Fancy Molasses
  • Salt and pepper
  • 450 g spaghetti


  1. Skin tomatoes by placing in boiling water for 1 minute – no longer. Lift out and plunge into cold water. Peel off the skins. Chop into ¼ inch cubes. Mix with the other sauce ingredients in a non-metallic bowl. Cover and let stand for at least 30 minutes. Cook the pasta in plenty of boiling salted water. Drain pasta and mix with the sauce. Cover with a lid and leave for 2-3 minutes, toss again and serve immediately.
