Molasses Sponge Cake


  • 5 eggs separated
  • ½ cup sugar
  • ½ cup Fancy Molasses
  • 1 tbsp grated orange rind
  • 1½ grated lemon rind
  • 2 tsp lemon juice
  • 1 cup sifted cake flour
  • ½ tsp salt


  1. Beat egg yolks until thick and lemon colored. Gradually add sugar and Fancy Molasses, beating after each addition, then beat 3 minutes longer. Stir in orange rind, lemon rind and juice. Add sifted flour and salt 1/3 at a time. Beat well after each addition. Beat egg whites until stiff and fold in.
  2. Bake at 325°F for 35-40 minutes in an ungreased 9" tube cake pan.
