Island Beef Stew

Ingredients:

  • 2 lbs boneless beef chuck
  • 2 tbsp flour
  • ½ tsp dry mustard
  • 1½ tsp salt
  • 2 tbsp vegetable oil
  • 1 14 oz. can of tomatoes
  • ½ cup sliced onion
  • 4 large carrots
  • 1 tsp celery salt
  • ¼ tsp pepper
  • 1/3 cup vinegar
  • 1/3 cup Fancy Molasses
  • 1½ cup water
  • 1/3 cup raisins
  • ½ tsp ginger

Directions:

  1. Wipe meat with damp cloth, then cut into 1½" cubes. Combine flour, mustard and ½ teaspoon salt. Dredge meat with flour mixture. Heat oil in Dutch oven and brown meat on all sides. Add tomatoes, onion, celery salt, remaining salt (1 tsp) and pepper. Mix vinegar, molasses and water and add to meat.
  2. Cover and simmer for two hours.
  3. Peel and slice carrots. Add to meat with raisins and ginger.
  4. Cook 20 to 30 minutes longer or until carrots are tender.
