Old Time Christmas Cake

Ingredients:

  • 1½ lbs. butter
  • 1½ lbs sugar
  • 10 eggs
  • ¾ cup Fancy Molasses
  • ½ cup milk
  • ¾ cup sherry
  • ¼ cup rum
  • 1 tbsp. each of lemon and almond flavouring
  • 6 cups all purpose flour
  • 3 lbs. raisins
  • 1 lb. currants (seeded)
  • 1 lb. cherries
  • 1 lb. citron
  • 1 lb. figs or dates
  • 1 lb. almonds
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1 tbsp. cinnamon
  • 1 tsp. nutmeg

Directions:

  1. Cream butter – add sugar gradually and beat thoroughly. Add beaten eggs, Fancy Molasses, milk, sherry, rum and flavouring. Dredge fruit and nuts in one cup of flour. Sift remaining flour, baking soda, cream of tartar and spices, and add to mixture with fruit. Mix well with a spoon. This mixture will make three cakes using 2 round tins (approx. 8" x 3½") and one round tin (approx. 6" x 3"). Line well-greased pans with heavy waxed paper. Fill pans ¾ full and bake 3 to 4 hours at 300°F.
