Date Flake Quick Bread

Ingredients:

  • 2½ cups sifted all-purpose flour
  • 3½ tsp. baking powder
  • 1 tsp. salt
  • ¼ cup sugar
  • ½ cup dates, chopped
  • ½ cup nuts, chopped
  • 1 egg, beaten
  • 1¼ cups milk
  • ½ cup Fancy Molasses
  • 4 tbsp. melted shortening
  • 1 cup slightly crushed cornflakes

Directions:

  1. Sift together flour, baking powder, salt and sugar. Stir in dates and nuts. Mix egg, milk, Fancy Molasses and slightly cooled shortening. Add to dry ingredients. Stir only enough to dampen flour. Fold in flakes, being careful not to overmix. Pour into well-greased 9 x 5 x 3" loaf pan, and bake one hour at 350-375°F.
